Two Long Island nursing facilities have teamed up with us to produce a series of television shows to engage older adults stuck at home while some community centers are still closed due to the COVID-19 pandemic.

Paragon Management’s Excel at Woodbury for Rehabilitation and Nursing and Lynbrook Restorative Therapy and Nursing have joined with The Life Enrichment Center to produce “Wisdom and Wonder” for North Shore TV.

The show airs Sundays at 9:00 am on public access TV, which is Channel 20 on Optimum and Channel 37 on FIOS, which serves 14 incorporated villages along the north shore of Long Island. There are currently plans in the works to expand the show’s distribution to other public access stations, according to Paragon Management.

Teddy’s Apple Cake Recipe

Past member Louise Chapman baked this cake for Center members for many years The recipe originated on President Theodore Roosevelt’s property where all the ingredients were grown. Roosevelt loved eating a piece served with a scoop of vanilla ice cream. We recommend doing the same!

Ingredients:
1 1/4 cups oil
2 cups sugar
3 eggs
1 teaspoon vanilla
3 cups flour

1 teaspoon baking soda
1 teaspoon salt
3 cups peeled, cored, cut up apples
1 cup chopped walnuts
1 teaspoon cinnamon
1 cup raisins

Preheat oven to 350˚. Beat together oil & sugar. Add eggs & vanilla until creamy. Stir in flour, salt, baking soda, and cinnamon. Add chopped apples, walnuts, and raisins. Turn into a greased & floured 9” tube pan. Bake approx. 1 hour and 15 minutes. Cool on rack before turning out of pan.
